Healthy Oat Pancakes

2 cups of oats
3/4 cup of oat milk
1 egg
4 tbsp of coconut sugar
2 tbsp of maca powder
2 tbs of vanilla extract
1 tsp of baking powder
1/4 tsp of baking soda
1 dash of sea salt

Blend oats and maca powder in blender for 40 seconds on low. Blend the rest of the ingredients for 30 seconds, then cook. This will make about 4 pancakes.

Tips: You can add a little more oat milk if you feel that the mix is too thick.

I hate the taste of maca but you can barely taste them in these. Maca has a lot of great health benefits from improving energy, anxiety, and depression to boosting your immune system and aiding female hormonal imbalance. You can pick it up at your local grocery stores like Trader Joe’s and Whole Foods. I also rarely like using coconut sugar to sweeten (pure maple syrup is much better) but in pancakes, you can actually taste them and give it a little something different. Enjoy!
